Burgoo fest in Utica Illinois near Starved Rock each October.
More than 30,000 people are expected to visit the north central Illinois village of Utica on Sunday, October 12, 2014 to attend one of the state’s longest running festivals.
The Burgoo Festival, named for a hearty pioneer stew that will be served during the Sunday event, is the 45th edition of the LaSalle County Historical Society’s major fund raising event of the year.
More than 300 arts and craft vendors and flea marketers will line the streets of Utica between 9 a.m. and 5 p.m. Food vendors will offer butterflied porkchops, barbecue, home made ice cream, cold drinks, the Society’s famous home made pies, and more.
Various bands and vocalists will provide musical entertainment all day. Also, remember to visit the barn, blacksmith, and watch various demonstrations.
Don't forget to arrive early for the Burgoo Kick-Off on Saturday, October 11, 2014 and visit vendors in the recently renovated Canal Market.
It is a big fun party where burgoo is served from large steaming caldrons.Traditional burgoo was made using whatever meats and vegetables were available—typically, venison, squirrel, opossum, raccoon or game birds, and was often associated with autumn and the harvest season. French and Indians in the Illinois River Valley would gather for a party and everyone would bring something to put into the stew pot.
Today they use a specific meat in their recipes, usually pork, chicken, or mutton, which, along with the spices used, creates a distinct flavor unique to each restaurant.
Burgoo making often serves as a social event.
Burgoo making often serves as a social event.
A typical burgoo is a combination of at least three ingredients: a combination of beef, pork, chicken, and mutton, often hickory-smoked, but other meats are seen occasionally; vegetables, such as lima beans, corn, okra, and potatoes; and a thickening agent, such as cornmeal, ground beans, whole wheat, or potato starch. Traditionally, soup boneswere added for taste and thickening.
The ingredients are combined in order of cooking time required, with meat first, vegetables next, and thickening agents as necessary. A good burgoo is said to be able to have a spoon stand up in it. Cider vinegar, hot sauce, Worcestershire sauce, or chili powder are commoncondiments. In some areas spices such as Cinnamon and nutmeg are used, as in Cincinnati chili.
